You cannoli find it here! Cannoli Brothers opened in 2016 to specialise in making those scrumptious Italian dessert pastries. They are a family owned business with a father, two sons, and a daughter all pitching in.

“I found back in 2016 that cannolis were becoming quite popular,” says Cannoli Brothers Owner Andrew Stefanou. After spending a considerable amount of time testing, they developed a recipe around what they call the blonde and the dark Italian. Vegetarian, vegan, dairy free, and gluten intolerant options are available too.

“We developed our recipes and made cannoli shells that are light and crispy,” says Andrew. “We wanted to create an experience where we fill our cannolis onsite and people get them fresh.”

Cannoli Brothers proudly uses local ingredients. For instance, they use flour, eggs, Jasper and Myrtle chocolates and Piallago Smokehouse bacon from Canberra. They also use a fresh wasabi roots from Tasmania.

“On the first Sunday, we went to the Old Bus Depot Markets with 150 cannolis and sold out,” says Andrew. Subsequently, their momentum only grew the immediate week when they sold 500 cannolis at a Christmas dessert market in Canberra.

Cannoli Brothers Menu

The Blonde Italian:

Two sizes are available: Grande and Banbini. The Blonde pastry shell is made with vermouth, crispy thin filled with a rich 70% dark chocolate & fresh orange oil crema.

The Dark Italian:

A darker, richer pastry flavoured with fresh ground cinnamon and Marsala. This pastry is a heavier and flavourful pastry filled with a delicate Madagascan vanilla crema with a hint of fresh lemon.

The Ice Cream Cannoli

A frozen ice cream filled Cannoli delight using our finest crisp shell filled with buttermilk ice-cream using many flavours and topping to make this our Summer fav.

The Savoury Italian:

Savoury salted and spice shell filled with a range of savoury fillings including vegetarian delights. This is an original creation, which is shocking to some cannoli aficionados.

The Gluten Free Goddess:

A signature gluten-intolerant cannoli shell using the finest fresh milled seeds to present a truly delectable cannoli for those that “couldn’t”.


Our fresh handmade “Sfogs” are layered crisp pastries whose texture resembles leaves stacked on each other. Sfogliatelle look like seashells when baked. Similarly, people have called them ‘lobster tails’ because of their resemblance. Sweetened semolina crema and a hint of citron fill the pastries. (Not at all markets and events)
