Seriously good ice cream
John Marshall, owner and ice-cream extraordinaire at Frugii Ice Cream, takes quite a somewhat different approach to combining ice-cream flavours. How does pistachio and vodka sound? What about Roast Potato ice cream? Trust us, each and every one of the ice cream flavours John Marshall creates are delicious. But if it’s something a little bit more festive you’re after, Frugii are also taking orders for their Christmas flavours. Amazing sounding varieties such as champagne sorbet, eggnog, Christmas pudding, brandy and our favourite, spiced gingerbread flavours, will all be finding their way to the Old Bus Depot Markets this year.
So what is John’s favourite flavour? Like most people, it depends on the day and the mood he’s in. On a cooler day, he prefers flavours like cardamom and chocolate, but in the warmer months he enjoys a fruit based delight.
Chocolate is quite possibly John’s signature ingredient. Doing nothing by halves, John takes fermented cocoa beans and hand makes his own chocolate at his home here in Canberra. Similarly, John will make most of his ingredients from scratch including extracting his own vanilla extract from Australian grown vanilla pods and making his own fruit pastes.
A keen cook from a very young age, John’s love of ice cream began when he walked into an Italian deli and bought himself a 2Litre ice cream maker. After 10 years of creating marvelous flavours, we say Frugii is a welcome addition to the already impressive lineup of gourmet goodies we have on offer every Sunday.
